Seasonality
Out of season, you pay twice
A tomato grown in a heated greenhouse in winter emits several times more greenhouse gases than the same tomato grown in open ground in August. The growing calendar is the first lever for a lighter menu — before organic and before local.
- Build the menu from the calendar of the event month, not from a fixed idea of a dish.
- Keep two or three fallback recipes: bad weather shifts a harvest by two weeks.
- Share your volumes as soon as capacity is known: that is what makes an order workable for a grower.
- A well-built plant-based dish holds up under mass service and cuts the menu's footprint sharply.
